Small olive shortbread

A simple and easy Moroccan crackers recipe that would make the tea taste better: small olives shortbread with an exquisite Parmesan flavor.


170 g butter (at room temperature)
100 g  black olives, cut into small pieces
3 tablespoons olive oil
100 g parmesan
200 g flour
1 teaspoon yogurt
1 tablespoon salt
1 egg


Mix the flour and the butter, add the parmesan, the eggs, and mix well. Add the olives to the dough. Mix well. Form it in a round shape and cover it with a cling film. Let it cool down for an hour. Spread the dough with a rolling pin on the floured work surface to a thickness of 1 cm. Cut out using a cookie cutter or a glass, arrange the dough on a plate covered with parchment paper. Bake for 12 minutes at 180 ° C in a preheated oven.

Variation: when all the ingredients are well mixed, form the dough into a sausage shape about 5 cm in diameter and cut the slices. Proceed for cooking in the same way.
