Pancakes with figs and custard

Tasty dessert for snack time or to end a meal on a sweet note. Keep in mind that you can replace the figs with another seasonal fruit.

Ingredients (for 16 pancakes)

–  3 eggs

–  250 g of flour

–  1/2 liter of milk

–  50 g of butter

–  2 sachets of vanilla

–  1/2 kg of figs

–  3 tbsp. of honey

–  Cinnamon

for the cream :

–  1/2 liter of milk

–  4 egg yolks

–  100 g of powdered sugar

–  A few drops of bitter almond extract


Pancakes: mix together the milk, eggs, flour, butter, and vanilla. Let rest. Cook the pancakes one by one in a pan.

Fig jam: cut the figs in 4 and brown them in a knob of butter over high heat. Add the honey and cinnamon, and cook over low heat until it’s reduced.

Custard: warm the milk. Beat together the sugar and egg yolks. Drizzle the milk over the sugar/egg mixture. Return to the heat and cook over low heat,  keep stirring constantly, until the cream thickens. Off the heat, add a few drops of bitter almond extract and keep in the fridge. Stuff the crêpes with fig jam, and serve with cold custard.
