Ingredients
(for 4 people)
1 pineapple
2 fairly firm mangoes
125 g raspberries
125 g strawberries
1 dragon fruit
1 pomegranate
1 orange
4 clementines
2 kiwis
1 Granny Smith apple
2 lemons
2 limes
10 fresh figs
300 g dates paste
1 can of coconut milk
100 g liquid honey
125 g caster sugar
70 g shelled pistachios
70 g blanched almonds
300 g fresh goat cheese
bunch of fresh mint
Preparation
In a blender, mix the date paste into pieces, the figs, and the fresh goat cheese. Add the coconut milk and sugar and mix again.
Peel all the fruits and cut them according to their shape. Raise the supremes of the citrus fruits. Cut thin slices of apple and stroke them with lemon. Cut the mangoes into diamonds and the strawberries and pineapple into wedges.
Arrange the cheese with figs, dates, and coconut milk on a plate.
Arrange the fruit and drizzle with a drizzle of honey. Sprinkle with pistachios and almonds and garnish with chopped mint leaves.
