Ingredients (For 6 people)
– 250 g of prawns
– 750 g of avocado – 1.5 kg of orange – 1 grapefruit – 1 lemon – 50 g of radish – Espelette pepper – Salt – Pepper
Squeeze 1 kg of orange, bring to a boil to reduce the syrup. Reserve in the fridge.
Peel the citrus fruits and remove the segments.
Cook the prawns in boiling water for 4 minutes, cool in ice water and peel.
Peel the avocados and cut into large slices.
Arrange the avocado slices, citrus segments, and prawns on a plate.
Season with orange juice and decorate with thin slices of radish, coriander leaves and a small pinch of Espelette pepper.
