Salad with three melons and shrimps

For more freshness and color on your summer tables, what could be better than adding fruit to your salads.


(for 8 skewers)
1/2 cantaloupe melon
1/4 yellow melon
1/4 green or embroidered melon
8 mini mozzarella balls
8 cherry tomatoes
8 shrimps
Olive oil
Balsamic vinaigrette :
2 tablespoons of oil olive
2 tsp balsamic vinegar
1 tsp mustard
Salt and pepper


Macerate the cheese balls and the cherry tomatoes in olive oil. Form balls with the melons.
Quickly brown the shrimp in a bit of olive oil. Assemble the skewers with the different ingredients: melon, cheese, tomato, basil and shrimps. Mix the elements of the sauce well to obtain a thick vinaigrette.
Serve the kebabs very cold on a bed of mesclun salad with the sauce.
