– 4 slices of salmon fillet without skin or ridges
– 1 orange
– 1 grapefruit
– 1/2 bunch of dill
– 1/2 lemon juice
– 1 bunch of green asparagus
– 1 pinch of cracked black pepper and salt
– 500 g grated broccoli (couscous)
In a bowl, combine the grated broccoli, dill, lemon juice, salt and pepper. Season salmon steaks, store on a baking sheet and bake in the center of the oven for 7 to 8 minutes. Cook the asparagus the English way.
Prepare the citrus segments and keep them cool.
Dress: line the broccoli couscous in a cookie cutter in the center of the plate, place the asparagus next to salmon and citrus fruits. Serve the plate with a lime vinaigrette dressing.
