Quinoa Salad

Listed among other superfoods thanks to its many nutritional qualities, quinoa is composed of 70% carbohydrates, 15% proteins, few lipids, fibers, and many minerals such as iron, manganese, and copper. Just what you’d need in a good salad.


100 g quinoa
100 g almonds
2 tomatoes
1 avocado
1 cucumber
1 bunch of parsley
3 tablespoons olive oil
3 tablespoons lemon juice
1 tablespoon salted soy sauce
Salt, pepper


Wash and cook the quinoa for 10 minutes in boiling salted water. Roast the almonds for 20 minutes in the oven at 150 ° C. Wash the tomatoes and cut them into thin rings. Cut the avocado into cubes and squeeze lemon over it to prevent it from darkening. Peel the cucumber, cut it in half lengthwise, remove the seeds, and cut it into small cubes. Chop the parsley. Coarsely chop the almonds. Emulsify olive oil with lemon juice and soy sauce. Mix the quinoa with the tomatoes, avocado, cucumber, parsley, and almonds. Add the sauce just before serving.
