Couscous salad with Feta by Amal El Madade

Amal El Madade, the presenter of the famous cookery show, Tyab el Qalb, shares with FDM readers some of her recipes. Today, and following the concept she defends, namely the promotion of a fast, healthy and tasty cuisine, she came up with a Couscous salad with Feta. Good, and nutritious. Enjoy your meal.

Ingredients : (4 people)

A bowl of fine couscous
100g of FETA
1 cucumber
1 tomato
1 handful of pitted green olives
1 lemon
Salt pepper
Tabasco
Coriander
Olive oil

Preparation:

In a bowl, coat the couscous seeds with 2 teaspoons of olive oil and a good pinch of salt. Pour a bowl of hot water and immediately cover with food film and leave to rest for 5 min.
Using a fork, separate the grains. Add cucumber and tomato cut in small cubes, olives, chopped coriander and FETA.

In a bowl, mix olive oil, lemon juice and a few drops of tabasco. Salt and pepper. Pour the vinaigrette over the couscous mixture and mix to coat all the ingredients. And Voilà!
