A bowl of fine couscous
100g of FETA
1 handful of pitted green olives
In a bowl, coat the couscous seeds with 2 teaspoons of olive oil and a good pinch of salt. Pour a bowl of hot water and immediately cover with food film and leave to rest for 5 min.
Using a fork, separate the grains. Add cucumber and tomato cut in small cubes, olives, chopped coriander and FETA.
In a bowl, mix olive oil, lemon juice and a few drops of tabasco. Salt and pepper. Pour the vinaigrette over the couscous mixture and mix to coat all the ingredients. And Voilà!
