Healthy Moroccan lentil soup, in a Jar

In case you haven’t noticed, today’s recipe is a little bit different than what we have shared before. Practical for the busy cooks, or the lazy ones, here is a pre-made then packaged version of the classic Moroccan lentil soup.


2 Medium jars (ingredients fill 2)

3 1/2 Cups red lentils

1/2 Cup dried onion flakes

1 Teaspoon garlic powder

1 Teaspoon cinnamon

2 Teaspoon coriander

2 Teaspoon turmeric

1 Teaspoon cumin

2 Teaspoon dried parsley

1 Teaspoon ground pepper

2 Teaspoon sea salt

2 Bay leaves


For the Jars

Combine all spices (except onion flakes and bay leaf) in a bowl.

Add 1 cup of lentils to each jar.

Top each jar with half of dried onion flakes and half of spice mixture.

Top each with 3/4 cup of more lentils.

Place a bay leaf on the top and seal with top.

Instructions for cooking soup

Add contents of jar to a large pot and top with 7 CUPS of water.

Bring mixture to a boil then let simmer with the top on for 20 minutes.

Remove lid and simmer for 20 more minutes.

Feel free to add chopped kale, chard or other greens in last 5 minutes of cooking for a veggie boost.
